Paleo Chocolate Chip Cookies with SmartSugar Coconut Blend
1/3 cup butter, softened
1/3 cup almond butter, stirred
3/4 cup SmartSugar - Coconut Sugar Blend
1 egg, room temperature
1 1/2 teaspoon vanilla
1 1/2 cup almond flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dark chocolate chunks or chips
[optional] Sea Salt Flakes
Preheat oven to 350F.
Cream butter and almond butter with an electric mixer on medium speed until smooth. Add SmartSugar - Coconut Sugar Blend and beat on medium-low speed until completely incorporated.
Add egg and vanilla and continue mixing on medium-low speed until combined.
In a small bowl, mix together almond flour, baking soda, and salt.
Add dry ingredients to the mixing bowl and mix on low speed until incorporated, increasing speed to medium-low until well combined.
Add chocolate chips or chunks and mix on low until evenly dispersed.
Roll 2-inch cookie dough balls (about 40 grams each) and place on a baking sheet lined with parchment paper.
Sprinkle with sea salt flakes.
Bake at 350F for 12-14 minutes, or until the edges are golden brown.
