Naturally Dyed Rainbow Frosted Layer Cake

This rainbow cake is unicorn and fairy approved! Bonus: It’s made bright and vibrant with natural food coloring by our friends at Color Kitchen. On top of that, it’s so fast and easy to make with our Organic Vanilla Cake Mix and Confetti Pop Frosting, featuring naturally dyed sprinkles. For any color-lover, it’s the perfect spring or summer dessert for any birthday, brunch, or even a Thursday night!
Using Color Kitchen’s powdered natural food dye was really easy. It mixed well with our ready-to-use buttercream frosting and the colors were more vibrant than anything we have used in the past for a natural food colorant. You may remember our Rainbow Cakelets recipe which used things like tumeric and carrot juice to create colorful frostings. Using the powders was much easier and the color was much more vibrant. You can’t go wrong with this #lazygirlhack!

Ingredients
1 stick (½ cup) butter, melted (or plant-based alternative)
3 eggs (or flax egg)
½ cup milk (or plant-based milk)
1 jar Miss Jones Organic Confetti Pop Buttercream Frosting
1 box Miss Jones Vanilla Cake Mix
Piping bags and tips
5-inch circle cutter

Directions
Preheat the oven to 350 degrees F. Mix together eggs, milk, butter and mix until just combined.
Grease a 18×13 inch sheet pan and line with parchment paper. Pour the batter in the sheet pan and bake for 15-20 minutes, or just as the cake begins to brown. Let cool.
Use a 5-inch circle cutter to cut out 6 circles and remove from the rest of the sheet.
Frosting prep
For the pink frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting
¼ teaspoon pink Color Kitchen dye
¼ teaspoon waterFor the orange frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting¼ teaspoon yellow Color Kitchen dye¼ teaspoon water
For the yellow frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting
¼ teaspoon yellow Color Kitchen dye
¼ teaspoon waterFor the green frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting
¼ teaspoon green Color Kitchen dye
¼ teaspoon waterFor the blue frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting
¼ teaspoon blue Color Kitchen dye
¾ teaspoon waterFor the purple frosting:
½ cup Miss Jones Organic Confetti Pop Buttercream Frosting
¼ teaspoon blue Color Kitchen dye
¼ teaspoon pink Color Kitchen dye
¼ teaspoon waterAdd a ½ cup of frosting into six separate bowls. For each color, dissolve the dye in water and mix into the frostings until completely dyed.
Scoop each frosting into piping bags.
Assemble your cake by piping frosting from the outer edge and filling it in. Start with piping purple frosting on the bottom layer and carefully stacking another cake layer on top. On that layer, pipe blue frosting, starting from the outer edge and going inward, and stack a cake layer on top. Continue piping and layering until you complete your rainbow.
Crumble up some of the leftover cake and cluster it on top of your rainbow cake. Add some sprinkles, if desired. A little sprinkles never hurt anyone. 🙂
