Gluten Free Mini Banana Bread Beauties

Four indulgent mini banana breads, each topped with a dreamy twist: organic creamy cream cheese frosting with crushed walnuts, organic rich chocolate frosting with coconut shreds, gooey caramel, and golden streusel. Moist, gluten-free, and perfectly mini-sized, because one flavor just isn’t enough.

Miss Jones Gluten Free Banana Bread and Muffin Mix
2 large eggs
2 tablespoons milk or water
½ cup melted unsalted butter or oil
Miss Jones Organic Cream Cheese Frosting
Crushed Walnuts
Miss Jones Organic Chocolate Frosting
Coconut Shreds
Sliced Bananas
10 Individually Wrapped Caramel Candies
Preheat oven to 350 degrees. Lightly grease and flour the sides and bottoms, of four 3x5.5” mini loaf pans.
Mix together ½ tablespoon melted butter and 1/8 cup mix until fully incorporated and crumbly. Set streusel topping aside.
In a large bowl, mash the bananas with a fork and add together the eggs, milk, and butter, until combined.
Gently pour the batter into the mini loaf pans evenly.
Bake for 35-40 minutes until the edges are set and until a toothpick comes out with moist and not wet batter.
While the Mini Banana Beauties are cooling, melt the caramels gently on the stovetop and set aside.
Finish with layering the tops of each loaf with vanilla frosting and crushed walnuts, chocolate frosting and coconut shreds, streusel crumble and finally sliced bananas with melted caramel drizzle.
