SmartSugar Banana Bread
Banana bread is a classic comfort food, and our recipe takes it to a whole new level. It is made with our SmartSugar Cane Sugar Blend, so it is just as sweet as regular banana bread with only half the sugar! This recipe is super easy to make and it takes only 15 minutes to prep, so it’s the perfect way to use up those overripe bananas that are sitting on your counter
Feel free to customize this recipe by adding nuts, chocolate chips, or warm spices!
2 large bananas or 3 medium-sized bananas (about 1 ¼ cup, mashed)
½ cup (1 stick) butter, melted
½ teaspoon vanilla extract
1 cup Smart Sugar - Cane Sugar Blend
1 ¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
Optional: ½ teaspoon cinnamon
Preheat the oven to 350℉ and grease a loaf pan with butter or cooking spray.
In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon (if using). Set aside.
In a separate bowl, mash the bananas with a fork or potato masher. Add the melted butter to the bowl and mix until combined. Then, add the eggs and vanilla extract and mix again until the mixture is smooth (it’s okay to have some small banana chunks).
Add the wet ingredients to the dry ingredients and whisk until all ingredients are evenly combined. Pour the mixture into the prepared loaf pan.
Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Let cool for at least 15 minutes before cutting and serving.
