Classic brownies just got a delicious, paleo makeover. Our paleo brownie recipe is made with our Smart Sugar Coconut Sugar blend, so it has half the sugar of normal brownies with the same amount of sweetness.
Just because you’re adhering to a special diet does not mean that you have to sacrifice flavor. These brownies are so fudgy, rich, and delicious, you’d never be able to tell that they’re grain-free, dairy-free, low-sugar, and vegan!
Ingredients
1 cup coconut oil, melted + 1 tablespoon for greasing
1 cup Smart Sugar - Coconut Sugar blend
3 eggs
1 tsp vanilla
1 cup almond flour
¾ cup cocoa powder
1/2 tsp baking soda
1/4 tsp sea salt
Optional: ½ cup paleo-friendly chocolate chips
Directions
Preheat the oven to 350℉. Grease a 9x9 inch baking pan with coconut oil and line with parchment paper.
In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt and whisk to combine. Set aside.
In a separate bowl, whisk together the melted coconut oil and Smart Sugar. Then add the eggs and vanilla to the mixture and whisk until all ingredients are combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Transfer the mixture into the prepared baking pan.
Sprinkle ¼ cup chocolate chips on top (if using), and set aside the remaining ¼ cup.
Bake for 25 minutes. If you insert a toothpick at the center of the pan, it should come out clean. Let cool for at least 20 minutes before cutting and serving.
Optional step: If you are using paleo chocolate chips, melt the remaining ¼ cup and drizzle it on top.
